Patisserie Kirin is a French-Japanese Café specializing in opera cakes, viennoiserie and Japanese inspired teas and coffees. The mission is simple; to create the most authentic French and Japanese desserts for people to enjoy.

ABout the Baker


Born and raised in Toronto, Rylen started his culinary career at age 18, working as an apprentice chef for a Japanese restaurant.

Simultaneously, he attended George Brown College, where he has earned his Diploma in Culinary Management, and BA in Hospitality Operations Management. His formal training at George Brown was focused on French cuisine, but he excelled in Japanese cuisine, in which he worked for 6 years before further developing his skills into baking and pastry arts.

In order to offer the best, he decided to learn from the best, so he travelled to London, UK, where he enrolled and trained at Le Cordon Bleu and received his Diplome du Patisserie. During his time in London, he also travelled around Europe to further his knowledge of authentic French and European pastries. Upon his return to Toronto, he worked under Chef Masa Terauchi (Bakery Nakamura) and also had a brief experience working at One Restaurant at the Hazelton Hotel in Yorkville.

Many of his products reflect his experience as a Japanese Cuisine chef, keeping his products simple, yet elegant without sacrificing quality and taste. As he operates Patisserie Kirin, he continuously strives to better his products and only offer the best to all his guests.
